Use room-temperature ingredients -- Cold ingredients like milk, eggs, and butter won't combine with the rest of the ingredients in your batter if you don’t let them warm to room temperature before mixing. You can prevent lumpy, uneven batter and overmixing by waiting for your ingredients to warm up.
2. Be consistent with batter -- If all your cupcake liners are not filled to the same height, then some of your cupcakes will bake quicker than others, thus causing them to dry out before the rest are finished cooking. To ensure an even bake, fill cupcake liners using an ice cream or cookie scoop. This will also prevent overfilling and guarantee consistently sized cupcakes.
3. Watch your cupcakes, but not too carefully -- It is important to keep an eye on your cupcakes as they bake. Not all ovens bake at the same temperature, so cupcakes may cook quicker than the recipe states.
